Thai Mango Chicken

I found this recipe on about.com and scrumptious would be the most suitable word for it – just ask my housemates!

Check out my webisode on You Tube. You will see I ad-libbed a little, but it worked well. The best advice I have is to NOT blend the sauce in a food processor. The texture of the fresh mango was just beautiful. Also, add a little more syrup from the tinned mangos, the sauce could stand to be a little thinner than mine was.

You could easily substitute fish for chicken, or prawns similarly.

The thai spices of the combination was simply ambrosial – coriander is the best herb on the planet, and particularly suited to this dish.
